About 68 percent of people prefer a plain edge knife to a serrated edge knife simply because the former is easier to sharpen. While only 32 percent prefer the latter, the serration is actually better for tough jobs such as cutting a rope.
Knives existed since prehistoric times and serve as a weapon, hunting tool, and an eating utensil. The first knives were made of flint while the first metallic knife was made of copper and designed as a symmetrical double-edged dagger. The first single-edged knife was invented 4000 years ago in the Bronze age and was also used for carpentry.
People used to carry their own knife in a sheath attached to their belts. These sharp multi-purpose knives also appeared at the dining tables and often posed some danger. In 1669, King Louis XIV of France banned these sharp knives at the dining tables and was replaced by wider and blunter knives.
Of all the knife blades, the obsidian blades are among the sharpest. It's many times sharper than metal and cut through between cells whereas steel blades can only tear cells apart. Obsidian blades were used during the Stone Age for making knives but have now made its way as a modern surgical tool.

1. Boning Knife

This is a very popular choice for some knives due to how durable and hard carbon steel tends to be. It is also significantly easier to sharpen than stainless steel is, making it a great choice for somebody who loves to have their knives kept as sharp as possible. One problem with carbon steel knives is that they are much more susceptible to corrosion because they lack the high chromium content that is found in stainless steel. While they will dull quickly due to abrasion, they will sharpen incredibly quickly as well. However, high carbon steel blades will discolor when exposed to acidic foods and can turn black over time, although this change in color does not negatively affect the blade's use.
